Seared Salmon with Golden Kraut Relish

Serves: 2 | Prep time: 5 min | Cook time: 12 min

Ingredients:

  • 2 Wild-caught salmon fillets

  • ¾ cup Pani Zina Sauerkraut (lightly chopped)

  • 1 tbsp Fresh dill, minced

  • ½ Cucumber, finely diced

  • 1 tsp Capers (optional)

  • 1 tbsp Extra virgin olive oil

  • Salt & Pepper to taste

Instructions:

  • Relish: In a small glass bowl, combine the chopped sauerkraut, fresh dill, diced cucumber, and capers. Toss with a splash of olive oil and set aside to let the flavors meld.

  • Sear: Season salmon with salt and pepper. Heat a skillet over medium-high and sear the salmon skin-side down for 4–5 minutes until crispy, then flip and cook for another 3 minutes.

  • Serve: Place the hot salmon on a plate and top with a large spoonful of the chilled Pani Zina relish.

  • Pairing: Serve alongside steamed asparagus or a light arugula salad.
