Seared Salmon with Golden Kraut Relish
Serves: 2 | Prep time: 5 min | Cook time: 12 min
Ingredients:
2 Wild-caught salmon fillets
¾ cup Pani Zina Sauerkraut (lightly chopped)
1 tbsp Fresh dill, minced
½ Cucumber, finely diced
1 tsp Capers (optional)
1 tbsp Extra virgin olive oil
Salt & Pepper to taste
Instructions:
Relish: In a small glass bowl, combine the chopped sauerkraut, fresh dill, diced cucumber, and capers. Toss with a splash of olive oil and set aside to let the flavors meld.
Sear: Season salmon with salt and pepper. Heat a skillet over medium-high and sear the salmon skin-side down for 4–5 minutes until crispy, then flip and cook for another 3 minutes.
Serve: Place the hot salmon on a plate and top with a large spoonful of the chilled Pani Zina relish.
Pairing: Serve alongside steamed asparagus or a light arugula salad.
