The story of Pani Zina began long before it became a brand. As a young girl, I spent my school breaks on my grandmother's farm in rural Ukraine. Winter on the farm meant no harvest, so, in her dimly lit basement, there were barrels of fermented tomatoes, apples, watermelons, and sauerkraut...

Our Philosophy: For us, fermentation has always been a way to care for the body and preserve what matters. Our products are made slowly, in small batches, using traditional methods that support natural fermentation and living cultures.

OUR STORY

The story of Pani Zina began long before it became a brand. As a young girl, I spent my school breaks on my grandmother's farm in rural Ukraine. Winter on the farm meant no harvest, so, in her dimly lit basement, there were barrels of fermented tomatoes, apples, watermelons, and sauerkraut. All of this was stored and prepared so we could stay strong during the bitter Ukrainian winter.

When the war began in Ukraine, everything changed. Here in the United States, I spent months raising $16,000, helping my home in any way that I could. I sent that money to animal shelters, volunteers baking bread for the hungry, buying medicine for the elderly, and the list goes on. I just wanted to help those who truly needed it, the ones forgotten by larger charitable organizations. I quickly realized, however, that my begging for donations had limits. After some time, people had no more to give, and some would forget about the cause entirely. So, I needed something that would keep the thought of my home alive, a sustainable product that could keep giving.

Around the same time, I brought my 76-year old mom to safety. She left behind everything that she had, her home, her flourishing garden, her family land, history, and every single person that she knew and saw as familiar. She traveled through Lithuania and Ireland alone before finally coming to my home in Virginia. Through all of this, she did it with health problems, no knowledge of the English language, and a broken heart. Yet, her spirit was strong; despite all of this, she woke up every morning with a smile and determination to live another day. Reunited with her family, in a new home and kitchen, she began making sauerkraut for family and friends.

As I watched my mom ferment sauerkraut, I noticed a beauty in her methods that no industrial machine could ever replicate. Every batch of sauerkraut would be cared for and nurtured. She would speak to it as if it were living and needed to be tended to. Upon watching her, I realized that her creation is more than food; it is love and care at the heart of every step of the process.

Our Mission: Pani Zina is a story of survival, care, and starting over. By choosing Pani Zina, you are not only supporting your own well-being, but you are also helping us support others. A portion of our work is dedicated to rebuilding homes and lives in our hometown of Kherson, Ukraine. We have moved from asking for help to creating something that gives back.
