The Probiotic Harvest Bowl

Ingredients:

  • ½ cup Pani Zina Classic Sauerkraut (undrained for extra zest)

  • 1 cup Roasted sweet potato cubes (seasoned with cinnamon and sea salt)

  • 1 small Avocado, sliced

  • ½ cup Cooked quinoa or farro

  • 2 tbsp Toasted pumpkin seeds (pepitas)

  • 1 handful Fresh baby spinach or massaged kale

  • Dressing: 1 tbsp Tahini + 1 tsp Raw honey + Juice of half a lemon

Instructions:

  • Roast: Toss sweet potato cubes in olive oil and bake at 400°F until tender and slightly caramelized.

  • Base: Start with a bed of greens and grain in a shallow ceramic bowl.

  • Assemble: Arrange the roasted potatoes, sliced avocado, and a generous mound of Pani Zina Sauerkraut in distinct sections.

  • Finish: Drizzle with the tahini-lemon dressing and sprinkle with toasted pumpkin seeds for crunch.
